New seafood restaurant Coraline’s open at Beau Rivage
A new "Gulf to plate" seafood restaurant opened at the Beau Rivage on Monday.
The new fine dining seafood restaurant opened Monday evening to a line of customers who got the first taste of gulf cuisine at the casino.
The restaurants interior design takes inspiration from the French quarter of New Orleans, including arched windows allowing guests to enjoy a nice view of the water.
The general manager and head chef of Coraline’s spoke to us on the restaurant’s opening and what customers can expect now that they’re open.
“We did some soft openings over the weekend, we’re really excited to see everybody come in tonight,” said general manager Stephanie Scott. “They will be experiencing “Gulf to table”, (the restaurant) is a sister restaurant to our steakhouse BR Prime, but featuring our Gulf Coast seafoods. I’m really excited for them to get that waterfront view, and our only guests have been loving it.”
“We submitted everything to corporate in October of last year, we got the approval. A lot of research, a lot of menu development. It probably started with 100 items; we’ve narrowed it down to 51. Trial and error, feedback, tastings, samples, traveling, a lot of research,” said head chef Austin Dedeaux. “We have steamed seafood, very beautiful fresh seafood, fresh snapper, we’re gonna feature a different fish every week. Fresh crab meat, fresh jumbo lump crab, crab claws, Alaskan king crab, royal reds, fresh Gulf shrimp, we have beautiful steaks, a beautiful chicken dish on the menu, the tuna is some of the most beautiful tune I’ve seen in my career. It’s for everyone, it’s not just seafood. I think we have a dish on the menu for everyone.”
