CRAWFISH FESTIVAL
We peel them, we eat them, and occasionally we suck the heads… The 25th Annual Crawfish Music Festival is in full swing on their third day with a crawfish cook-off for all Cajun Chefs to put their recipes to the test.
News 25’s Taylor Rubach had a taste test of her own and has more on this friendly competition.
Piping hot, bright red, spicy boiled crawfish has people along the gulf coast flocking to this weekend’s festival at the coliseum.
More than 20 thousand pounds of crawfish are cooked up every year for this event for people to enjoy with family and friends.
“Crawfish is the best because it brings family and friends together. It’s always a big party when you’re boiling crawfish.”

“It’s all about the atmosphere when you do crawfish. Standing around the table, having some beer with your buddies, so you can interact with each other, have some good tunes playing, you just get to be there with all your friends.”

Setting good vibes aside, each cook is put to the test to meet the sensations of people’s taste buds, for them to decide who has the best recipe on the coast.
“There are about 30 different competitors and all Cajun chefs are put to the test to serve up the best crawfish based on peel ability, appearance and the flavor of crawfish. Personally, as a southerner, I like my crawfish extra spicy… It’s good!”

Each chef has their own twist on crawfish cooking… Boiling it with corn and potatoes or even some pineapples and carrots.
“We put everything in there. Because you got different people that like different stuff so we want to make sure everyone’s taken care of.”

And while taking home the cook-off trophy is one thing, making memories with each other makes the competition worthwhile.
“We hope to win it all. We hope for at least first or second in judges and first or second in people’s but it’s all about coming out here and having a good time, having a bunch of good people around you and just making memories.”
