Alternatives for recipes as eggs keep increasing in price

According to the Consumer Price Index, the average cost for a dozen eggs was $4.25 in December compared to $3.59 in November and $1.79 in December 2021. In other states, shoppers are paying almost $8 for eggs.
The average price for a dozen large eggs on the Coast is $5.20.
The biggest problem is disease. The country’s worst outbreak of avian flu, which was first detected in February last year, has resulted in the deaths of more than 44 million egg-laying hens, according to the Agriculture Department.
As egg prices rise, it may be harder for people to afford eggs. Egg alternatives such as apple sauce, baking soda, and other substitutions can help when it comes to your cooking strategies. Chef Instructor at MGCCC Todd Reilly said, “The best advice is just to try it out. Go look and see. There’s a lot of information, just go to any vegan website and you will find a bunch of information and just try them all and see which one best works for you. It’s always been used in vegan and vegetarian cooking for a long time, it’s just all the rest of us are now trying to pick up on that because we can’t afford eggs anymore.”
According to the Agriculture Department Animal and Plant Health Inspection Service, after facilities are sanitized and restocked with healthy laying hens, it takes four or five months for a chicken to be able to lay at its peak productivity which is about 24 eggs per month.
